This Mexican cauliflower crust pizza is a super tasty and easy dinner when you’re running short on time. The cauliflower crust is already made thanks to Trader Joe’s so just add refried beans, cheese, tomatoes and olives! Drop a few dollops of guacamole and salsa on top for extra flavor!

Let’s talk about one of my favorite places on earth -- Trader Joe’s. Do you also go there when you’re in a crunch for time and in need a quick, easy and tasty dinner? They have so many fun and tasty convenience foods at such a great price.

I especially love how frequently come out with new and trendy products. Recently the trend has been cauliflower EVERYTHING. Cauliflower gnocchi….cauliflower rice….cauliflower pizza crust. I have mixed feelings. As a non-diet dietitian, I find it quite annoying. But as one of those people who actually really enjoys cauliflower, I’m secretly excited. That’s how I ended up with cauliflower crust in my cart - it was one of my weekly impulse buys!

I was a little hesitant because of how diet-y a cauliflower pizza crust is, but my curiosity got the better of me. Turns out, it’s really good! I like the crispy, cracker-like texture! Normally I buy a ball of pizza dough, but I have a hard time rolling it out to get it crisp, so this is a great alternative when I’m craving pizza with a bit of crunch. I wouldn’t think of it as healthier, it’s simply a different texture, and of course a great option for someone who needs to eat gluten free for health reasons.

The inspiration for this Mexican cauliflower crust pizza was that awful Mexican pizza they served in elementary school. I hated it, but I thought I could make a fun adult version! Not your average pizza toppings, but how could creamy refried beans, melty cheese, olives and tomatoes not taste good on crispy pizza crust? And of course everything is better with guac! The toppings pair perfectly with the crispy cauliflower crust, which makes it taste almost tostada-like.

This Mexican cauliflower crust pizza an easy go-to for nights you don’t have time to cook. Most of the ingredients are things you probably already hav eon hand, and it barely takes any time to make! You don’t have to worry about wasting your time measuring exact ingredients, just spread on the canned refried beans as a sauce, top with cheese, black olives and tomatoes and pop in the oven.

DIY Cauliflower Crust:

If you’d like to try your hand at making cauliflower crust from scratch, this recipe is one that I’ve tried and like - probably because it’s basically just baked cheese as a crust! It is a bit time consuming, but it’s really tasty and flavorful, and has the same crispy texture as Trader Joe’s crust.

Mexican Cauliflower Crust Pizza

Makes 1 pizza

Ingredients

  • Trader Joe’s cauliflower crust pizza

  • Canned refried beans

  • Shredded Mexican blend or cheddar cheese

  • Halved cherry tomatoes

  • Chopped black olives

  • Salsa, for serving

  • Guacamole, for serving

Instructions

  1. Preheat oven to 450 degrees.

  2. Spread a 1/4 inch-ish thick layer of canned refried beans over the cauliflower crust. Top with a few handfuls of shredded cheese. Scatter cherry tomatoes and olives over the top.

  3. Place pizza on a baking sheet and bake in the oven 8-10 minutes until cheese is melted and edges are crispy and golden.

  4. Serve with salsa and guacamole
