Avocado Toast, Three Ways

Avocado toast is my go-to savory breakfast. Here are three of my favorite recipes - with a fried egg and hot sauce, radish and sea salt, and with caramelized onions and blistered tomatoes. 

When I was in high school, I had the horrible, nasty, no-good, very bad habit of skipping breakfast. I was much to preoccupied with high school things and not at all concerned with how to fuel my body. Shockingly, but well before lunch period, I had ravenously devoured the lunch I had packed. And because that lunch typically consisted of a sandwich on white bread and chips, I was hungry again by lunch time. Not wanting to waste precious socializing time waiting in line for "real food," I bought cookies from the vending machine and sat in the hallway chatting with my friends.

Once I got to college, I was forced to make breakfast a daily habit. My roommate and I always ate lunch together between classes, but our break was around 1 pm and the risk of me falling into a hypoglycemic coma was high.

Never having been a breakfast eater, I played around with options to see what would satisfy for the next five hours. Cereal filled me up for maybe 5 minutes and breakfast cake (aka muffins), pancakes, and other sugary stuff made me nauseous. Eventually I came upon the magical combination of whole grain toast, cheese and an egg, which kept me satiated, and became my breakfast standard for the next five years.

Then the whole avocado trend came along, and (obviously) I hopped on board! That's taken over my morning routine, since apparently I have a thing for fatty, yummy things on toast. 

Many mornings I keep it simple with sprouted grain toast topped with smashed avocado and hot sauce or sriracha. Other time I load it up with cheeses, veggies, and condiments. 

Over the years, I've come up with many different combinations, but these are my three favorites. When possible, I like to chop and cook ingredients in advance for easy assembly in the morning.


Avocado Toast with Caramelized Onions and Tomato

Makes 4 slices

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, thin sliced
  • 1 pint grape tomatoes
  • 2 avocados
  • 4 slices 100% whole grain bread, toasted (Ezekiel is my favorite!)

Instructions:

  1. Heat the oil in a skillet on medium-high heat. Add onions, sauté until translucent. Add tomatoes and cook until tomatoes are blistered, about 5-7 minutes. Season with salt and pepper.
  2. Top each slice of toast with half an avocado, mashed with a fork, and a quarter of the vegetables.

Avocado Toast with Radish, Microgreens and Sea Salt

Makes 4 slices

Ingredients:

  • 4 slices 100% whole grain or sprouted grain bread, toasted
  • 2 avocados
  • 2-3 radishes, thinly sliced
  • Handful of microgreens
  • Sea salt

Instructions:

  1. Top each slice of toast with half an avocado and mash with a fork. Top with radish, microgreens, and garnish with a sprinkle of sea salt.

Avocado Toast with Fried Egg and Hot Sauce

Makes 4

Ingredients:

  • 4 slices 100% whole grain or sprouted grain toast
  • 2 avocados
  • 1-2 teaspoons extra-virgin olive oil
  • 2 eggs
  • Hot sauce

Instructions:

  1. Heat the olive oil in a skillet on medium heat. Add the eggs and cook until whites are mostly set. Flip and cook one minute more.
  2. Spread toast with half an avocado and mash with a fork. Top with fried egg and drizzle with hot sauce.
